Part 1: Pickling Spice
Guy and I spent most of our Sunday procuring, preparing and cooking a dinner that would have been easy to go out for - cheeseburgers and fries - but was so satisfying and delicious to make for ourselves.
So we start with the pickling spice. You can buy this pre-made, but we decided to make it ourselves since we had most of the ingredients already. We needed it for our homemade ketchup, but we also plan to make our own pickles later in the week.
Pickling spice is basically a ton of really flavorful herbs, seeds and spices. We made ours using a recipe from Mark Bittman’s How to Cook Everything, and we basically threw the following ingredients into a jar and gave it a good shake:
whole cinnamon sticks
bay leaves
dried hot red chiles
mustard seeds
allspice berries
whole cloves
black peppercorns
coriander seeds
cardamom seeds
dill seeds
